Greek Macaroni

I thought that this blog might be a good place to keep a few family recipies we don’t want to lose.

Greek Macaroni

  • 4 T butter
  • 1 c chopped onions
  • 1 lb hamburger
  • 3/4 cup peeled, chopped tomatoes
  • 1 t salt
  • 1/4 t pepper
  • 1/4 t oregano
  • 1/2 c parmesan
  • 2 c dry macaroni

Plus sauce (see below).

Cook macaroni. Melt butter in skillet, add onions and meat, cook 5 minutes. Mix in tomatoes, salt, pepper, oregano. Cook over low five minutes. Mix in cheese. Spread 1/2 macaroni in buttered casserole. Spread meat over, cover with rest of macaroni.

Sauce

  • 2 T butter
  • 1 T flour
  • 1/2 t salt
  • 1/8 t pepper
  • 1 c milk
  • 1 egg yolk
  • 1/4 cup parmesan

Melt butter, blend in flour, salt, pepper. Add milk gradually, stirring to boiling point. Cook over low heat 5 minutes. Beat egg yolk and cheese together. slowly add hot sauce stirring steadily. Pour over casserole.

Bakes 30 minutes at 375 degrees.
